Champagne Ullens is one of Champagne’s most unconventional new domaines, founded not by a multigenerational local family but by Belgian architect Maxime Ullens, who arrived in 2012 intending only to restore an abandoned farm at the northern tip of the Montagne de Reims. Drawn in by the region’s growers and wines, he trained at Avize and began cultivating a tiny parcel of ungrafted vines alongside newly acquired and leased plots on the Petite Montagne, ultimately working with about four hectares of organically farmed Pinot Meunier and Chardonnay. Ullens ages his wines patiently—twelve months in barrel and thirty‑six in bottle—and has commissioned custom oak barrels from his own forest while experimenting with hybrid vessels of clay, glass, and steel. The result is a small but striking collection of deeply vinous, terroir‑driven Champagnes that have quickly earned a place on Michelin‑starred lists across France.
