The Pillot family has been rooted in Chassagne‑Montrachet since 1625, tending vines on the gentle slopes of the Côte de Beaune for nearly four centuries. In the 1990s, Fernand and his son Laurent expanded the family’s reach into Pommard and Volnay, adding exceptional new parcels to their historic holdings. Today, Laurent and his son Adrien farm 15 hectares across 50 small plots—including 12 prized Premiers Crus—with an uncompromising commitment to quality. Every grape is hand‑harvested, yields are kept intentionally low, and each vineyard is cared for under strict agrobiologie principles. The estate proudly earned HVE‑3 certification in 2021 and has been an active member of the DEPHY‑EcoPhyto environmental research group since 2012. The result is a range of wines that reflect both deep tradition and a forward‑thinking dedication to sustainability.

Wines from Pommard are often hard and virile; not so with the Pommard 'Tavannes' which offers substantial body and a round mouthfeel, with cherry, blackberry and spice aromas which echo on the palate, supported by fine, slightly dry tannins. This wine has fine structure giving it excellent cellaring potential, but why wait?
