Gérard Bertrand reveals the history of the great terroirs of the South of France. The first written trace of the Abbey of Saint Hilaire date back to 825. The Abbey is located near Limoux and is famous for having housed the monks who discovered the secret of effervescent wines.
The 2023 is a beautiful, golden yellow colour. A complex, aromatic nose revealing hints of white flower, honey, green apple and toast. Crisp, elegant structure on the palate, where the fine texture of the bubbles complements the wine naturally. Perfect as an aperitif served or matched with goat cheese (Cabecou, Pelardon, Rocamadour…) and sweet desserts.

91 Gismondi on Wine The 825 refers to the first written record (825 AD) of the Abbey of Saint‑Hilaire near Limoux, where monks are credited with discovering sparkling wine. The 2023 Cremant is a blend of chenin blanc, chardonnay, pinot noir, and mauzac. It is a delightfully fresh sparkler made in the traditional Méthode Champenoise. The colour is pale gold, the nose is open and full of white flowers, honey, green apples, and toasted bread. While nosing this sparkler is highly satisfying, sipping its crisp, elegant, lively mineral salinity is even better. It is ready to drink, but you might need an extra bottle to refill those quickly emptying glasses. Fine value.
