Following the successes of our Sensory Training and Sensory Calibration tastings, we’re raising the stakes with Sensory Evaluation—a guided blind tasting designed to sharpen your palate and deepen your understanding of regional style.
This time, we’ll explore two great winemaking traditions head-to-head: California’s and Oregon's bold, expressive New World wines and France’s timeless Old World classics. Six wines will be poured—each representing a benchmark grape and region—but the labels will remain hidden.
As we taste, you’ll be challenged to rely on sight, smell, and taste alone, unraveling the differences in fruit expression, structure, oak influence, and terroir. Is that Chardonnay shaped by Burgundian restraint or California sunshine? Is the Paso Bordeaux blend like a velvet curtain—lush and dramatic, or more like a silky Pomerol—subtle, layered?
We’ll guide the conversation and offer clues along the way, but this is your opportunity to test your instincts, compare impressions with others in the room, and refine your ability to distinguish style, varietal markers, and regional character across continents.
This tasting is perfect for enthusiasts, WSET students, or anyone who wants to move from “I like this wine” to “I know this wine.”
