Domaine William Fèvre is one of Chablis’s benchmark producers, celebrated for pure, mineral‑driven wines that capture the region’s signature chalk and seashell terroir. Farming an impressive mosaic of old‑vine parcels across 38 hectares, the domaine crafts Chablis with bright citrus, crisp green apple, and a long, saline finish. Their style balances freshness with depth, offering classic Chablis character that’s both elegant and immediately appealing to lovers of clean, expressive white Burgundy.
Refined on the nose, with aromas of citrus, white-fleshed fruit, and flowers. Fresh and supple on the palate, with the mineral character typical of the Chablis appellation running through a clean, precise finish.
92 Jasper Morris The domaine’s holdings cover 38 ha, and the various cuvées have just been blended, and will stay on lees through to December. Pale lemon yellow. An entrancing bouquet, on the sunnier side but with a mineral undercurrent. Sherbet on the palate along with citrus, good concentration, and an evenly balanced finish. Drink from 2025-2028. Barrel Sample: 89-92
92 James Suckling Good depth of minerality goes a bit deeper and vertically here with green apples, lime, chalk and seashells. Nicely round, with subtle salinity on the medium-bodied palate before a sleek, fresh finish. Drink or hold.
90 Robert Parker's Wine Advocate Sourced from a mosaic of exposures and elevations and incorporating old vines planted between 1969 and 1972, the 2023 Chablis Village offers aromas of pear, white flowers and freshly baked bread. Medium- to full-bodied, ample and charming, it is underpinned by ripe yet racy acidity and concludes with a long, saline finish. Harvested earlier to preserve freshness, this is a well-executed village-level Chablis.
