After a carefully controlling the state of maturation, harvesting takes place during the 2nd week of September, after being de-stemmed and crushed they undergo a controlled temperature maceration to maintain a high sugar content.
The fermentation is thermostatically controlled; once the wines start to spume it is bottled.
Slightly effervescent; a blend of Croatina, Uva Rara, and Barbera; A sweet wine of a bright ruby red with purplish reflections. Intense and vinous with notes of raspberry and blueberry jams and violets, smooth and fragrant. Pair with all biscuits, jam tarts, strawberries, peaches, fruit salad, spicy cheeses and roast chestnuts
