Pineau des Charentes is the happy marriage of cognac with grape must. During the harvest, the grape must freshly collected under the press is mixed with cognac brandy, this is called mutage. The addition of cognac brandy to the grape must stops the alcoholic fermentation and thus stabilizes the product. After several years of aging in oak barrels, we obtain a subtle and harmonious drink: Pineau des Charentes.
For the elaboration of our Pineau, we always choose the grape must of our oldest plots, more than 50 years old. These low-yielding plots ensure perfect ripeness of the grapes. Pineau is made mainly from Ugni Blanc and Colombard grapes as well as a small percentage of Sémillon. During aging, the cellar master carefully blends different years from these three grape varieties. The blends reveal the fruity aromas of the Ugni Blanc and the floral aromas of the Colombard.
