Domaine Vocoret & Fils, located near the town of Auxerre, is the epitome of a hands-on, family-owned estate. For five generations, the domaine has been passed down from father to son, with numerous uncles and cousins working at the estate. The strong feeling of dedication and close family relationships has allowed them to adapt throughout the years, each generation applying modern techniques that has promoted innovation in Chablis.
Their Vaillons climat represents 22 acres.Close to the village of Chablis, this site has excelent exposure due to its southwest exposure. The name “vaillon” means little valley. Vaillon is one of seven premiers crus in Chablis. The Kimmeridgian limestone soils contain tiny fossilized marine life that gives Chablis it’s unique flavor profile.
Liberal ripe Meyer lemon, citrus blossoms and spice aromas are accented by notes of seaside minerality. Flavors are layered with citrus, orchard fruit and clean oyster-shell minerality. A generous wine with great energy and vibrancy and will reward with additional cellaring.
