What’s for Dinner Wednesday

How often do you struggle with the question of “What’s for dinner?” We certainly do. So easy to stick with the stand-bys or take out or leftovers. It got so bad we had to make a rule - Wednesday needs to be special. So, we thought we would share what we are eating this week, and what we are drinking with it, to make Hump Day amazing.

This week we are making easy paella and drinking some wines from the Iberian peninsula - Spain and Portugal. Really great paella normally can be a little fiddly, but this version is easy to do on a weeknight and really only takes one pan so clean up is pretty easy.

Wednesday Paella

We use Bon Appetit’s Cheater’s Paella as our base recipe. We cook everything in one big cast iron pan which means easy cleanup after all the cooking and wine drinking. If we are short anything, the Fresh Market on Henderson right across from the shop always has seafood stock, short grain paella rice, saffron, chorizo, and any thing we are missing. You can also make this vegetarian/pescatarian easily by swapping in some chick’n chunks (we really like Daring Plant Chicken for this recipe - you can find them at Sprouts or Publix) and veggie chorizo (Field Roast’s Spicy Mexican Chipotle sausage is a good chorizo sub). Swing by the shop, get your wine, hit Fresh Market, and you should be ready!


These wines will make a great line up for paella. There are some complex flavors going in here - saffron, chorizo, seafood stock, the crispy rice - so each of these wines will pair well at different points in the meal.
