What's for Dinner? Rotisserie Chicken Spaghetti Squash

Regular readers have probably noticed a theme here at W4DW - get some deals at the grocery store and find a recipe that is minimal work but produces a special dish, and pair it with awesome wine. This week’s dish was inspired by a sale on store-bought rotisserie chicken and some spaghetti squash, combined with some of the wines from Stonestreet we had at last night’s tasting.

How to make Rotisserie Chicken Spaghetti Squash

Once I had my discount chicken and squash in hand, I needed to find something to do with it.  A quick spin on teh interwebs turned up this recipe for Rotisserie Chicken Spaghetti Squash that fits my criteria - a little special with not a lot of work. I always like a little green somewhere, so I added a broccoli top (about a cup) that I pulled apart in small pieces, and while I used cheddar mixed in, I topped with some shredded gruyere to bring in some of the tang. One casserole dish for the whole thing means more time for wine and less for cleanup. Vegetarian? Toast some chick’n strips and use them instead.

What pairs with Rotisserie Chicken Spaghetti Squash?

You could go a lot of ways with this - a heavier white or a softer red would be great. Luckily, we just had a great tasting of Stonestreet wines last night that featured some amazing Chardonnay and Cabernet from their mountain top vineyards. The Chards were very weighty and silky - very balanced around deep Chardonnay flavors of lemon curd, pear, and honeydew. The Cabernets (from Alexander Valley) are released after several years in the bottle and have softened nicely - tannins that are velvety. They open with bay leaf, blackberry, bramble with a long finish. I wouldn’t normally pair Cab with a dish like this, but these have the body to match well.
